Description
A creamy, tangy, and dairy-free twist on the classic Caesar dressing—made with cashews, lemon, garlic, and a hint of Dijon. Perfect for salads, wraps, and grain bowls.
Ingredients
- 1/2 cup raw cashews (soaked for 1–2 hours)
- 1 tbsp Dijon mustard
- 2 tbsp lemon juice
- 1 tsp caper brine (or 1 tbsp capers)
- 1 garlic clove
- 1 tsp gluten-free tamari or coconut aminos
- 1/3 cup water (or more for desired consistency)
- Salt and pepper to taste
Instructions
1. Drain and rinse the soaked cashews.
2. Place all ingredients in a high-speed blender.
3. Blend until smooth and creamy, adding water as needed.
4. Taste and adjust seasoning with salt, pepper, or lemon.
5. Store in a sealed jar in the fridge for up to 5 days.
Notes
If you’re short on time, use boiling water and soak cashews for 15 minutes.
Delicious drizzled over roasted veggies, kale salads, or as a dip for gluten-free crackers.
