Description
A rich, cozy and naturally gluten free vegan soup recipe made with lentils, vegetables, and coconut milk. One-pot, flexible, and full of global flavor.
Ingredients
- 1 tbsp olive oil
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 2 carrots, chopped
- 1 sweet potato, cubed
- 1/2 cup red lentils
- 1 tsp turmeric
- 1 tsp cumin
- 1/2 tsp smoked paprika
- 4 cups vegetable broth
- 1 cup canned coconut milk
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish
Instructions
1. Heat olive oil in a large pot over medium heat. Add onion and sauté for 3–4 minutes.
2. Stir in garlic, carrots, and sweet potato. Cook for another 5 minutes.
3. Add lentils, turmeric, cumin, and paprika. Stir to coat the vegetables in spices.
4. Pour in vegetable broth and bring to a boil.
5. Reduce heat and simmer for 20 minutes until lentils and veggies are soft.
6. Stir in coconut milk and season with salt and pepper. Simmer another 5 minutes.
7. Serve hot, garnished with fresh herbs.
Notes
This soup gets better the next day. You can blend half of it for a thicker texture.
Swap red lentils for green or brown if needed, but adjust cooking time.
